Peanut Chicken Salad Jar

2 Serves

DRESSING:
• 30ml soy sauce
• 20g honey
• 20ml rice vinegar
• 10g sesame oil
• 30g crunchy peanut butter

SALAD:
• 60g vermicelli noodles
• 200g carrot
• 200g cucumber
• 200g cabbage
• 10g fresh mint
• 10g scallions
• 200g chicken breast

METHOD:
1. Make the dressing: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and peanut butter until smooth.

2. Prepare the salad: Cook the vermicelli noodles as per package instructions. Slice the veggies and cook the chicken breast.

3. Assemble: Layer the salad ingredients in a meal prep container, keeping the dressing at the bottom to prevent sogginess.

4. Serve: When ready to eat, pour the dressing over the salad, toss and enjoy!
