Mushroom popcorn
If you are looking for a kid-friendly way to cook mushrooms – celebrity chef Miguel Maestre has you covered! These bite-sized button mushrooms are masked with Panko crumbs, sauces and delicious herbs that little ones (and parents) will love.

Ingredients
• 300 g button mushrooms
• Splash olive oil
• 1 cup panko dried breadcrumbs
• 1 cup popcorn
• 1 tsp dried oregano
• 1/2 lemon zest
• 1 tbs sesame seeds
• 2 tbs honey
• 2 tbs soy sauce
Method
Step 1
Preheat oven to 175°C. To make the Panko crumb, mix Panko, popcorn, oregano, sesame seeds and lemon zest in a large mixing bowl and set aside.
Step 2
On a baking dish, dress Mushrooms with soy, honey and olive oil and roast till tender.
Step 3
Remove from the oven. Coat Mushrooms in Panko mix, one at a time, making sure they’re coated evenly and covered entirely.
Step 4
Serve with sweet chili and/or honey-soy dipping sauce. Serve in a popcorn box.
Notes
• This recipe is a snack – though you could always double the quantities and turn it into a meal with some extra veggies or rice.
• To make honey-soy dipping sauce, simply combine equal parts honey and soy sauce.
