Baby Spinach & Mango Salad

Ingredients
• 1 packet baby spinach & rocket
• 1 ripe mango, diced
• 1 ripe avocado, sliced
• 1 punnet blueberries
• 1 ripe pomegranate (or punnet of seeds)
• 1 red onion, thinly sliced
• A drizzle of Pilar’s Caramelised Balsamic Vinegar
• A drizzle of good quality olive oil

To serve
Gently toss all ingredients in a large bowl. Finish with the balsamic vinegar and olive oil just before serving, allowing the natural flavours to shine.
