• 1/2 (about 2.2kg) seedless watermelon, peeled, coarsely chopped
• 2 teaspoons finely grated ginger
• 2 tablespoons lemon juice
• Mint leaves, to serve
• Ice cubes, to serve
Place watermelon, ginger and lemon juice in the jug of a blender and blend until smooth.
Add sugar, if desired.
Strain through a fine sieve into a serving jug.
Add mint and ice cubes and stir to combine.
